For the Sciacchetrà the most beautiful and ripest white grapes, mostly Bosco, are hung up on hooks along a line to dry in fresh and ventilated areas until around mid-November. The grapes are then handpicked one by one from the stem and pressed by feet.

The traditional method contributes to the wine’s softness and complexity.
